The report is that they saved much of the artwork. In a way it is fortunate that the fire started in the roof beams. Much of the structure is intact. However, I read that the restoration they had been doing was problematic because the limestone was crumbling.

The cathedral took almost 200 years to build. it was started in 1163 and completed in 1345. It was pretty much wrecked during the French Revolution and rebuilt and restored in the 19th century. It will be rebuilt, perhaps closer to its original plans. We have a lot of experience with these things, given that so many historic buildings had to be restored after World War Two. In the former Soviet Union a whole bunch of replica replacements have been built of historic churches, mosques, and synagogues.

On the other hand, the roof the roof beams themselves dated to the Middle Ages and are now lost forever. The new roof construction will doubtless be superior and fire retardant.

Correct me if I'm wrong, but when Hitler ordered the destruction of Paris when the Allies were advancing, even he didn't mess with Notre Dame Cathedral.
