Death's cover of the Judas Priest song Painkiller is one of my all-time favorites. The original is pretty cool already, but Death improves it ten-fold.

Wall of Voodoo - Ring of Fire
I always liked Wall of Voodoo's take on Johnny's Ring of Fire, even more than Mr. Zappa's reggae one. The guitar riff that takes the song out from around 2:23, is pure evil genius.
