As you know, we make a lot of our meals from scratch using individual spices. We dont often use convenience spices becsue they of ten have a very very high salt content.

There is one pre mixed spice that we use because it tastes great, is easy to use but sadly has highish salt so we use perhaps every two weeks.

Schwartz for chef Blackened Cajun seasoning. 550g plastic jar from Costco. Great sprinkled on chicken or fresh fish such as cod fillet or catfish if you can get it before shallow frying in a quality oil. This has some real bite and quite a bit of chili. We use cod loin and serve it with a green salad and oven baked fried potato chunks or the same cooked in the low fat tefal fryer thingy.

Had some coconut shrimp, hushpuppies, and fried okra. The shrimp sucked, the hushpuppies were so-so, but I must say the fried okra was the star of the show....



Now really, I don't know, do you guys over in the UK have okra? If you do, you should really try it, deep fried. Like popcorn.
