You could try opening the book as wide as it'll go, (pressing it open to 'break the spine') and running a very sharp knife right down the exact middle between the pages so that the knife only goes through the glue between the pages.
If this works and you get the pages out, you'll need to place a 12" ruler along the edges of the pages that were inside the book and cut down those edges along the ruler, cutting off just enough of the edge to make 'stitching' any book-spanning images back together after scanning a little easier. Or perhaps, after 'breaking the spine' as mentioned above, you could try cutting the spine from the back of the book. You would probably have to do this a couple of times, but it means you wouldn't have the pages in the way when doing it.
