The Search for the Sharpest Cheddar marches on! Heber Valley Artisan Cheese / Snake Creek Valley / Utah / 2-year cheddar Fair to mid range with a musty taste that overtakes the cheddar flavor. 4/10 Substandard variety is barely discernable as cheddar despite being advertised as "powerfully intense and complex". 3/10 A mild example that probably has more in common with Tillamook basic Sharp. It was also the easiest to slice, but we all know, the crumblier, the sharper the flavor. Despite the lack of "bite" I still sorta liked this one. 7/10 |

One of my favorites is the Black Diamond 4 Year aged cheddar
I used to deal with a couple who had a small store dealing in fresh fruits and veggies would have some cheeses there he called prohibition cheeses aged over 8 years that would bite you back sadly he closed shop haven't found any more since then

The only place I find it at this time is in Sam's Club stores
They also have tubs of the spread there also

Ooh, you want sharp?
A fresh or even medium-aged Caerphilly takes some beating. A basic supermarket version of Caerphilly is a tangy treat that has the sharp taste and texture of unpasteurised yoghurt. Puts Wensleydale to shame. The more aged it become, of course, it becomes more and more deep and complex. For me, it's fantastic at every stage of its maturity. Melts well too.
