A quokka or a roo can't taste like chicken because they're both mammals(a quokka is a marsupial-slightly lower on the evolutionary scale). Secondly I would say quokkas evolved before primates. Thus Kev is out of luck!

Roo tastes like roo. It doesn't taste like venison but it has the same sort of toughness and gamey flavour. Quite nice I think, but it's better suited to slow cooking or minced into patties.
