Ancient grains are grains that haven't been altered by selective breeding by humans to improve them in some way. Whether they are better for you than modern grains depends on who you talk to. There is no firm evidence they are.

Gluten is a mixture of proteins found in wheat and wheat related grains. If you have Celiac Disease you should definitely be avoiding it.. Eating it won't kill you, just make you wish you were dead.
Again, despite what all the self styled experts would have you believe, there's no evidence that restricting your diet to what our caveman ancestors ate is better for you that eating modern grains.

An example of an "ancient grain" is bere, or ninety day barley, which has been cultivated in north European countries for millennia. It has been superseded by modern barley in large scale commercial cultivation in most of Europe because modern barley has higher yields. But interest in bere has revived in recent times. It is well suited to conditions in high latitudes where summers are short but summer daylight hours are long: in those long summer days bere matures much faster than most other grain crops. Oats will also grow in these latitudes but they have a different pattern and have to be sown early, because they grow well in cold conditions but go dormant in the summer heat, before finishing and ripening in the autumn. Bere is sown later than oats and has been harvested while the oats are still green.

Bere is also tolerant of salty air and soil. This photograph was taken on Orkney "Mainland": the largest island in the Orkneys, in early August. The ripe yellow fields are the bere.
