Sea Cucumbers.

Was in China last year and the clients we had took us to a restaurant and ordered for everyone and one of the dish was Sea Cucumbers.

To them not only it's a delicacy: if someone orders it, it's like someone ordered caviar.

In China if you are a guest at a table and they order expensive items that are considered delicacies to them, that's a sign that they respect you and trust you.

Furthermore in China it's rude to refuse to eat anything your host orders for the whole party especially when the host is someone you are trying to secure a big money work contract from.
