In addition to the cruelty to animal arguments that stopped horses from been tripped up and hurt for action movies, the realities of war would probably make most audience members sick.

In WWII, around 80% of the German Army used horses for pulling wagon/guns. The effects of artillery fire/air attacks on such columns of the German Army were mentioned in various incidents - notably Falaise Gap/Pocket https://en.wikipedia.org/wiki/Falaise_Pocket

Not to mention the smell of dead horses rotting in the August sun, the sight and sounds of horses screaming in pain while dragging their intestines behind them would make most people vomit.
