To them not only it's a delicacy: if someone orders it, it's like someone ordered caviar.

In China if you are a guest at a table and they order expensive items that are considered delicacies to them, that's a sign that they respect you and trust you.

Furthermore in China it's rude to refuse to eat anything your host orders for the whole party especially when the host is someone you are trying to secure a big money work contract from.
In a similar vein: sea urchins......anyone who willingly eats these should be forced to surrender their human membership card...........
